Jean-Georges One&Only Palmilla San José del Cabo, Mexico
Working closely with acclaimed chef Jean-George Vongerichten, JBI has reimagined the exceptional Suviche and Market restaurants at the flagship One & Only Resort in Cabo San Lucas, Mexico. Rich, warm, and inviting, the interior design combines the local character with classic European elegance and a touch of Moorish style to provide a cohesive experience across the various dining options.
Market Steak Restaurant is a showcase for the meats, wines, and theatrical preparation of Chef Jean-George’s fare. The dining room provides views into an expo kitchen, glass-walled meat curing room, and a jewel-like wine decanting room. Oversized glass carriage lanterns hang above tables surrounded by plush, contemporary armchairs and colorful banquettes.
Stepping over to Suviche, a more muted color palette was selected to complement the seafood-based cuisine. Running the entire length of one wall is a new 12-seat sushi counter carved from local Parota wood. Framed by soft, sumptuous drapery, the 30-seat enclosed veranda terrace is perfect for more relaxed dining.
