In 2000, famed chef Todd English opened his first Olives restaurant in New York, at the W Hotel Union Square. Following several successful collaborations with Chef English, including Olives Las Vegas and The Plaza Food Hall, JBI reinvented this flagship location. Evolving the design from its previous rustic charm, JBI created a modern but inviting aesthetic. Fresh combinations of textures– including dark woods and blackened steel – echo the trees in Union Square Park just across the street. With a copper mesh light fixture above, the bar now anchors the space. Large round pendant lights, crafted of recycled glass and metal, hang above banquette seating facing 17th Street. A nine-seat white marble bar segues into a long raw bar, which wraps in front of the exposition kitchen.
